YOUR TASKS
The Food Structure & Function Research Group (FSF), headed by Prof. dr. ir. Koen Dewettinck, is looking for a highly motivated and enthusiastic scientific co-worker in the framework of an FWO project entitled ‘Investigating the role of fat crystal networks in the oral processing behavior of fat-continuous dispersions’. The overall research objective is to better understand the relation between the nature of the fat crystal networks in dispersions, i.e. suspensions and w/o-emulsions, and in-mouth processing of these complex food systems. The innovative character of this research proposal is based on three pillars, namely (1) combining instrumental tools and human senses to quantify in-mouth processing parameters related to mouthfeel and aroma release, (2) investigating fat crystallization in dispersions at different length scales and (3) relating the structural properties of the dispersions to their sensory characteristics during oral processing. Insights in this relationship should provide new concepts to produce high-quality food products with an improved nutritional profile.
As a scientific co-worker, you are responsible for the execution of the project and the generation of scientific output (conference presentations and papers, peer-reviewed paper), guidance of master thesis and/or internship students working on the topic. In addition, you will also contribute to the overall practices in the research group, e.g. as the responsible of specific instruments.
WHAT WE ARE LOOKING FOR
- You hold a Master’s degree in Bioengineering Sciences or equivalent, with a vast knowledge of and interest in food technology, sensory, food physics and/or food physical chemistry. Preferably, you have experience in analytical approaches to study nano-, micro-, meso- and/or macroscopic properties of fat containing foods. Also, last year students can apply for the vacancy, especially those who are excelling in their theses research.
- Important additional qualifications are sense of initiative, team spirit, sense of responsibility, motivation and dynamism, persistence, and good communication and reporting skills.
- Good English linguistic skills are required.
WHAT WE CAN OFFER YOU
- We offer you a contract of definite duration for the period of three years.
- Your contract will start on 1/06/2021 at the earliest.
- Your remuneration will be determined by salary scale WM1 to WM4.
